Jambalaya
- 1 1/2 c. finely chopped onion
- 1 tsp. garlic
- 6 Tbsp. Crisco
- 1 (16 oz.) can tomatoes
- 6 Tbsp. tomato paste
- 1/2 c. finely chopped parsley
- 1/4 c. finely chopped green pepper
- 1 Tbsp. parsley
- 3 whole cloves
- 1/2 tsp. thyme
- 1 tsp. salt
- 1/2 tsp. cayenne pepper
- 1 lb. frozen shrimp
- 1/2 lb. crab meat
- 1 c. chicken cubes
- 1 c. chicken broth
- 1 c. cooked rice
- Saute onion and garlic powder in Crisco until onion is clear. Add tomatoes and tomato paste.
- Stir to chop tomatoes.
- Add next 7 ingredients.
- Cook for 5 minutes.
- Add shrimp, crab meat and chicken; pour in chicken broth.
- Cook until heated.
- Serve over hot rice.
