Apricot Bread
- 3/4 c. dried apricots
- 1 c. warm water
- 3/4 c. white flour
- 3/4 c. whole wheat flour
- 1/2 c. wheat germ
- 3/4 c. rolled oats
- 2/3 c. sugar
- 1 Tbsp. baking powder
- 1/4 tsp. baking soda
- 3/4 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. freshly ground nutmeg
- 1 egg, beaten lightly
- 2 Tbsp. melted shortening or oil
- 1/2 to 3/4 c. chopped walnuts
- Soak dried apricots in warm water for 30 minutes.
- Save water. Sift together flour, wheat germ, rolled oats, sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
- Add egg, oil, 3/4 cup of the saved apricot water, walnuts and the coarsely chopped apricots.
- Place batter in a greased loaf pan.
- Bake at 350u0b0 for about 50 minutes or until done.
- Cool for 10 minutes and remove from pan.
- Store for 24 hours before serving.
