Quinoa And Lentil Salad With Arugula
- Dressing
- 3 tablespoons Fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/4 cup Olive oil
- Dash Salt and pepper
- Salad
- 1 cup Green lentils
- 1 cup Quinoa
- 3 Carrots, diced
- 1 Shallot diced
- 1 cup Cherry tomatoes, cut in half
- 1 cup Arugula, packed
- 1 Bay leaf
- 1 Clove of garlic
- Mixed together dressing ingredients, set aside.
- Prepare and cook quinoa according to instructions. Set aside to cool.
- Prepare and cook lentils according to instructions. Add one clove of garlic, one bay leaf, and salt and pepper to water. Set aside to cool.
- Meanwhile, cut up tomatoes, shallots, and carrots.
- Combine all ingredients, except arugula. Mix in dressing.
- Add arugula and lightly toss. Enjoy!
