Peanut Butter And Nerds Ice Cream With Chocolate Marshmallows
- Peanut Butter Ice Cream with Nerds
- 1 cup Creamy Peanut Butter
- 2/3 cup Sugar
- 1/3 cup Milk
- 2/3 cup Half and Half
- 2 cups Heavy Cream
- 1 1/2 teaspoons Vanilla Extract
- 6 Nerds (Mini Boxes)
- Chocolate Marshmallows
- 3/4 cup Water
- 1/2 cup Water
- 2 cups Sugar
- 2 tablespoons Gelatin
- 1/8 teaspoon Salt
- 1 tablespoon Vanilla Extract
- 1/2 cup Cocoa Powder
- Powdered Sugar
- Put the peanut butter and sugar in a bowl, and whisk until they're combined.
- Whisk in the milk and half-and-half on low until it's creamy, it should take about 2 minutes.
- Whisk in the vanilla and heavy cream, then cover it and chill in the fridge for a couple hours.
- Pour the mixture into your ice cream maker, and run according to your machine's instructions. Add the nerds in at the end just before the ice cream starts firming up.
- Pour the gelatin and 1/2 cup of water into a bowl.
- Bring the other 3/4 cup of water to a slow boil, then stir in the sugar until it dissolves. Keep it on medium for another 15 minutes, and give it a stir a few times while it's on the stove.
- Pour the mixture in a stand mixer and mix on low for 30 minutes. Add cocoa powder after 25 minutes.
- Cover the bottom of a container (like a tupperware) in wax paper, spray it with non-stick spray, and dust it with powdered sugar. Then pour your mixture in and freeze overnight.
- After freezing, dust with plenty of powdered sugar (don't hold back, folks), and cut into whatever shapes you want. Serve with ice cream.
