Mom'S Custard Pie

  1. Line prick pastry shell with a double thickness of heavy-duty foil.
  2. Bake at 450 degrees for 8 minutes.
  3. Remove foil; bake 5 minutes longer.
  4. Remove from the oven and set aside.
  5. Separate 1 egg; set the white aside.
  6. In a mixing bowl, beat the yolk and remaining eggs just until combined.
  7. Blend in sugar, salt and vanilla.
  8. Stir in milk.
  9. Beat reserved egg white until stiff peaks form; fold into egg mixture.
  10. Carefully pour into crust.
  11. Cover edges of pie with foil.
  12. Bake at 350 for 25 minutes.
  13. Remove foil bake 15-20 minutes longer or until a knife inserted in the center comes out clean.
  14. Cool on a wire rack.
  15. Sprinkle with nutmeg. Store in the refrigerator.
