Oatmeal Cookies
- 1/2 c. butter
- 1/2 c. firmly packed brown sugar
- 1/2 c. sugar
- 1 egg
- 1 tsp. vanilla
- 1 Tbsp. milk
- 1 c. sifted all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. double-acting baking powder
- 1/2 tsp. salt
- 2 c. oats (or wheat flakes)
- 3/4 c. chocolate chips (optional)
- 1 tsp. grated orange rind (optional)
- 1/2 c. raisins (optional)
- 1 can flaked coconut (optional)
- Preheat oven to 350u0b0.
- Cream butter.
- Add brown sugar and sugar and cream well.
- Combine egg, vanilla and milk and beat until smooth.
- Sift together flour, baking soda, baking powder and salt and add to the mixture.
- When beaten smooth, add oats or wheat flakes.
- Beat the mixture well.
- Drop cookies 2 inches apart on a well-greased cookie sheet and bake 10 to 12 minutes until light brown.
- Makes 3 dozen.
- Can add any optional ingredients, if desired.
