Walnut And Fig Sweet Bites
- 18-20 dry figs, soft
- 18-20 walnut halves
- 150 grams water
- 100 grams sugar
- 150 grams petit beurre biscuit, ground
- 150 grams ground walnut plus 100 g for rolling
- Grind the nuts with a nut grinder; hard cheese grinder is second in the line to do the job. Put on the side.
- Ground biscuits in a food processor or blender; just break them first in smaller pieces. You can also place biscuit between to parchment paper or plastic bag and use the rolling pin to break them into powder.
- Boil sugar and water till sugar dissolve, take off the stove and mix in ground biscuit and 150 g ground walnuts. Let it completely cool.
- In meantime; cut off the stem of the fig and using the tip of the paring knife make a slit where the stem was.
- Insert walnut halve into fig and press to close, it is sticky so it will hold together.
- Take completely cold walnut-biscuit mix and apply all over fig in a thin layer, roll between the palm of your hands and then into a ground walnut. Roll rest of the figs.
- Place in the freezer for 1 hour. To serve you will cut them in half; it is easier to cut when they are frozen.
- You can keep them in the freezer, in an airtight container for a couple months.
