Maple Cashew Cookie Dough Granola
- 1.5 cups Rolled Oats
- 1/4 cup Cashew Pieces
- 1/4 cup Cashew Butter
- 1 tablespoon Chia Seeds
- 1/4 teaspoon Cinnamon
- 1 pinch Salt
- 1/4 cup Dark Chocolate
- 2 tablespoons Maple Syrup
- 2 tablespoons Melted Coconut Oil
- 1 Egg White
- Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
- Place all dry ingredients in a large bowl beside the dark chocolate chips.
- In a small bowl, melt the coconut oil and cashew butter together.
- Then mix in everything else besides the egg whites.
- Pour the wet into the dry and mix until well combined.
- Next crack in the egg white and mix until well combined.
- Place on the baking sheet in one layer and bake for 15-minutes.
- After 15-minutes, stir the granola and break up any large clusters.
- Bake for another 10-15-minutes until golden brown.
- Let cool for 10-15-minutes before adding dark chocolate chips and store in a mason jar.
