Chicken Green Bean Casserole
- 1 chicken, stewed
- 1 can seasoned French-style green beans
- 20 fat-free crackers
- 1 can 99% fat-free cream of chicken soup (10 1/2 oz.)
- 1/2 soup can cold broth, skimmed of fat
- 1/2 tsp. dry onion flakes
- 1 Tbsp. fat-free margarine
- 1/2 lb. fat-free sliced American cheese
- 1/4 c. mushrooms (optional)
- Remove chicken from bones and cut into bite size pieces. Spray a 7 x 10 x 2-inch pan with Pam and arrange drained green beans over bottom.
- Place half of the boned chicken over green beans.
- Top with whole crackers.
- Cover the crackers with cheese slices; arrange remaining chicken over the cheese.
- Combine soup, broth, onion flakes and 1/4 cup grated cheese.
- Pour over chicken. Sprinkle casserole with cracker crumbs and mushrooms.
- Drizzle with melted margarine.
- Bake for 30 minutes at 350u0b0.
- This can be doubled for a larger casserole.
