Fried Chicken And Green Peppers(Servings: 8)
- 3 lb. chicken thighs, cut into pieces
- 2 Tbsp. soy sauce
- 1 Tbsp. sherry
- 6 Tbsp. cornstarch
- cooking oil
- 4 small green peppers, chopped in large pieces
- 1 to 2 Tbsp. fresh ginger root, minced
- 2 Tbsp. salad oil
- Cut chicken into slightly larger than bite size pieces. Marinate the meat with soy and sherry for 30 minutes and dust with cornstarch.
- Cover the meat thoroughly.
- Fry the meat for 5 minutes or more until it is done.
- Cut the green peppers in about 8 pieces. Each piece should not be bigger than 1 piece of meat.
- Heat 1 tablespoon of salad oil in a frying pan and fry the ginger and green peppers for 30 seconds.
- Put the chicken together with the prepared sauce back in the pan.
- Stir constantly for about 1 to 2 minutes until the chicken soaked in the sauce well.
