Fried Chicken With Hot Cranberry Sauce
- 2 (1 1/2 lb.) broilers
- 2 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 1/2 c. sifted flour
- 1 1/2 tsp. baking powder
- fat for deep frying
- 1 egg
- 1/2 c. water
- 1 c. canned whole cranberries
- 1/2 c. applesauce
- Cut up broilers.
- Season with 2 teaspoons of salt, pepper and sprinkle with 3 tablespoons of flour.
- Sift remaining flour, salt and baking powder into a bowl.
- Beat in egg and water.
- Dip chicken pieces in this batter, coating them thoroughly.
- Heat the fat to 370u0b0 and fry chicken a few pieces at a time.
- Drain and place in baking dish.
- Cover and bake in 350u0b0 oven for 30 minutes. Remove cover for last 10 minutes.
- Combine cranberries and applesauce and heat in saucepan.
- Serve with chicken.
