Chicken Breasts Parmesan
- 1/2 c. packaged pancake mix
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 4 whole chicken breasts, split
- 1/2 c. grated Parmesan
- 1 can condensed cream of mushroom soup
- 1/3 c. dry onion soup mix
- 1/3 c. milk
- parsley
- Heat oven to 375u0b0.
- In a medium sized bowl, combine pancake mix, salt and pepper.
- Roll chicken breasts in the mixture a few at a time to coat well.
- Place chicken in a shallow 3-quart baking dish, overlapping slightly if necessary.
- Combine mushroom soup, onion soup mix and milk in a small bowl and blend until smooth. Pour over chicken.
- Cover dish tightly with foil.
- Bake 1 hour. Remove foil and sprinkle cheese on top.
- Bake uncovered 15 minutes longer.
- Garnish with parsley.
- Serves 6.
