Zucchini Sausage Walnut Bread
- 1 pound flavorful breakfast sausage
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup quick-cooking oats
- 3 eggs, beaten
- 1/2 cup neutral oil
- 1/2 cup plain yogurt
- 1/3 cup brown sugar
- 4 tablespoons granulated white sugar
- 2 cups shredded, drained, packed zucchini
- 1 cup walnuts, toasted then ground
- Preheat the oven to 350u0b0. In a pan, brown the sausage well, drain on a paper towel, and crumble into small pieces.
- In a large bowl, combine the flours, baking soda, baking powder, salt, and oats.
- In a separate bowl, mix together the eggs, oil, yogurt, and sugars. Stir in the zucchini, then add the mixture to the dry ingredients. Stir until just combined. Fold in the nuts and sausage and pour into 2 greased loaf pans. Bake for about 50 to 60 minutes or until a toothpick comes out clean.
- Enjoy as is, or brown slices of the bread in butter.
