Apple Hamapé

  1. Heat 1/2 T oil in a saucepan over medium high heat. Saute until medium brown, deglazing pan with a splash of water if needed, about 15 minutes. Scrape onions into food processor. Add another 1/2 T oil and saute apples until soft and caramelized with no liquid left in pan. Place in food processor. Add remaining oil to pan and brown ham, adding to food processor when done. Add cream cheese, worcestershire and pepper and blend until almost smooth. Taste and adjust with salt and a squeeze of lemon (depending on sweetness of apples). Scrape into a bowl and chill completely before serving.
