Ski Shack Waffles

  1. In a medium bowl, sift together the flour, baking powder, and salt.
  2. Separate egg whites and yolks and set aside.
  3. In a large bowl, beat the yolks, milk, vegetable oil, and vanilla, then mix in the dry ingredients until combined, being careful not to over-mix.
  4. In a small bowl, whisk egg whites to a thick foam.
  5. Fold sugar and foamy egg whites into the batter; the mixture should have lumps of sugar.
  6. Cook each waffle according to the directions on your waffle iron, and drizzle the warm waffles with melted chocolate.
