Italian Chicken
- 6 thin chicken breasts
- 2 tablespoons olive oil, divided
- 1/2 teaspoon Mrs. Dash onion & herb
- 1/2 teaspoon Mrs. Dash garlic & herb
- 1/2 teaspoon Mrs. Dash Italian Medley
- 2 teaspoons salt, divided
- 1/2 teaspoon black pepper, divided
- 1 large zucchini, halved then cut in thin slices
- 1 bunch fresh aspargus, cut in 2 inch pieces
- 1 can diced tomatoes (basil, garlic, oregano)
- 1/2 cup chicken broth
- 2 garlic cloves, minced
- 10 fresh basil leaves, coarsely chopped
- 4 ounces fresh Parmesan cheese
- Heat a deep skillet over medium heat and add one tablespoon of olive oil and chicken.
- Sprinkle chicken evenly with seasonings, and 1/2 tsp salt, and 1/4 tsp black pepper.
- Cook 2-3 minutes, then flip the chicken, and cook another 2-3 minutes. Transfer to a plate.
- Add 1 tablespoon of olive oil to the pan, and then crush the garlic.
- Cook one minute, then add the zucchini and aspargus; cook 3-4 minutes.
- Add the tomatoes, broth, 1 1/2 tsp salt, and 1/4 tsp pepper, and mix well.
- Allow the liquids to lightly boil, and cook until zucchini is fork tender, about 2 minutes.
- Add fresh basil and mix it in.
- Sprinkle the Parmesan cheese evenly over the top and turn off heat once it melts.
