Chicken Delight
- 1 chicken with or without skin
- 1 pt. fresh mushrooms (whole or sliced)
- 3 medium potatoes
- 2 c. white wine
- dash of salt
- 2 cubes chicken bouillon (optional)
- 1 onion, sliced or diced
- 5 carrots
- 2 Tbsp. butter or margarine
- 1/4 tsp. pepper
- Boil chicken in large pot; may add bouillon cubes if you like. Melt butter or margarine and slowly saute mushrooms and onions until onions are transparent.
- Add to boiling chicken.
- Slice potatoes (about 1 1/2-inch slices).
- Add to chicken pot.
- Slice carrots (1 to 1 1/2-inch slices).
- Add to chicken pot.
- Add 2 cups of white wine to chicken pot.
- Salt and pepper to taste.
- Cover pot and turn heat on low.
- Cook for 1 hour or until chicken is done and vegetables are tender.
- A complete meal can be served, as a soup in bowls or on plates with individual pieces of chicken and vegetables with broth spooned over the top.
- Truly delightful chicken.
