Easy Pasta Salad
- 2 c. rotini or spiral macaroni, cooked and drained
- 1 pkg. Good Seasons Italian dressing, made as directed
- 1 Tbsp. dry basil or 2 Tbsp. fresh
- 1 Tbsp. dry parsley or 3 Tbsp. fresh, cut fine
- 2 c. broccoli buds, boiled 5 minutes and cooled
- 1/2 c. green onion, chopped
- 1 medium green pepper, chopped
- 1 medium cucumber, thinly sliced
- 2 tomatoes, cut in wedges
- pimento for added color
- 1/4 c. lemon juice
- 1/2 tsp. pepper
- Pour 1/2 the dressing over pasta.
- Add basil and parsley. Place in refrigerator for 24 hours.
- Prepare vegetables.
- Place in bowl.
- Sprinkle with lemon juice; place in refrigerator until ready to mix with pasta.
- Add rest of salad dressing and 1/2 teaspoon pepper.
- You can refrigerate for hours after it is mixed if you wish.
