Cabbage Patch Stew
- 1 to 2 lb. hamburger meat
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1/2 c. celery, chopped
- 1 can tomatoes, mashed
- 1 can kidney beans with liquid
- 1 can chili beans with liquid or 1 can pork and beans plus 1 tsp. chili powder
- salt and pepper to taste
- 2 to 3 c. shredded cabbage
- Put beef, onion, bell pepper and celery in a Dutch oven; cover and steam over medium heat until the meat turns white.
- Stir occasionally, breaking meat up with a fork.
- The meat may be mashed fine or left in bite-size chunks, as desired.
- (To reduce the fat content, drain the meat mixture at this point.)
- Add tomatoes, beans, salt and pepper.
- Bring to a boil.
- Add cabbage, pushing cabbage under the liquid.
- Cover and simmer about 20 minutes.
- Adjust seasoning.
- This freezes well and gets better every time it is warmed over.
