Low-Fat Orange Roughy(Low Cholesterol And Very Tasty; Serves 4)
- 1/4 c. extra virgin olive oil
- 1 lb. orange roughy fillets
- 1 medium onion, finely chopped
- 1 clove garlic, minced
- 1 large tomato, chopped
- 1 tsp. oregano
- 1/8 tsp. cumin
- 1/8 tsp. chili powder
- 1/2 c. orange juice
- 1/4 tsp. black pepper
- grated rind of 1 small orange
- Heat most of the oil in a skillet.
- Add fish and saute 2 minutes.
- Remove from pan and set aside.
- Add remaining ingredients except orange juice.
- Reduce heat to low and simmer 20 minutes.
- Add orange juice.
- Use remaining oil to grease sides and bottom of casserole.
- Put 1/2 of fish in casserole.
- Add 1/2 of the onion mixture.
- Layer with rest of fish.
- Top with remaining onion mixture.
- Cover.
- Bake 30 minutes or until bubbly at 375u0b0. Serve with rice.
