Garlic And Mustard Crumbed Chicken

  1. Heat oven to 400u0b0.
  2. Tear bread into small pieces and process in a food processor until crumbs form.
  3. Wipe any bread crumbs from the processor and put in the vinegar, parsley, mustard and garlic; process until all are finely chopped.
  4. Season to taste with salt and pepper.
  5. Place chicken in a baking pan, pour the vinegar mixture over chicken, rubbing onto both sides.
  6. Pat a thick coating of crumbs on both sides of chicken.
  7. Bake, uncovered, about 1 hour until juices run clear when pierce.
  8. Makes 4 servings.
