Garlic And Mustard Crumbed Chicken
- 4 pieces of chicken
- 5 or 6 slices firm white bread
- 1/4 c. vinegar or lemon juice
- 1/2 c. lightly packed fresh parsley
- 1/4 c. Dijon mustard
- 1 or 2 cloves of garlic
- 1/4 tsp. salt
- freshly ground pepper
- Heat oven to 400u0b0.
- Tear bread into small pieces and process in a food processor until crumbs form.
- Wipe any bread crumbs from the processor and put in the vinegar, parsley, mustard and garlic; process until all are finely chopped.
- Season to taste with salt and pepper.
- Place chicken in a baking pan, pour the vinegar mixture over chicken, rubbing onto both sides.
- Pat a thick coating of crumbs on both sides of chicken.
- Bake, uncovered, about 1 hour until juices run clear when pierce.
- Makes 4 servings.
