Chinese Shrimp Toast

  1. Remove crust from bread; cut each bread slice into 4 triangles. Set aside until shrimp mixture is complete.
  2. Chop shrimp, water chestnuts and bacon fat very finely.
  3. Add all remaining ingredients and mix well.
  4. Refrigerate mixture until firm.
  5. Heat oil in wok or deep skillet.
  6. Spread shrimp mixture on each bread triangle, covering edges.
  7. Place in hot oil, shrimp side down, first.
  8. Cook until shrimp mixture is light brown (does not take very long so keep an eye on it).
  9. Flip sides and immediately remove from oil. Drain on paper towel and serve.
