Potato Skins
- 4 large baking potatoes
- butter flavored cooking spray
- 1/2 tsp. salt
- 1/4 tsp. ground pepper
- 1/4 c. plain nonfat yogurt
- 1/4 c. low-fat sour cream
- 2 Tbsp. minced fresh chives
- 1 tsp. paprika
- Scrub potatoes thoroughly and prick several times with a fork. Bake at 450u0b0 for 45 minutes to 1 hour or until done.
- Allow potatoes to cool to touch.
- Cut potatoes in half, lengthwise, and scoop out pulp, leaving 1/8-inch thick shells.
- (Reserve pulp for other uses.)
- Cut each potato shell lengthwise into 4 strips and place on ungreased baking sheet.
- Spray potato strips lightly with cooking spray.
- Combine salt, paprika and pepper.
- Sprinkle over potato chips.
- Bake at 425u0b0 for 14 minutes or until crisp.
