Potato Skins

  1. Scrub potatoes thoroughly and prick several times with a fork. Bake at 450u0b0 for 45 minutes to 1 hour or until done.
  2. Allow potatoes to cool to touch.
  3. Cut potatoes in half, lengthwise, and scoop out pulp, leaving 1/8-inch thick shells.
  4. (Reserve pulp for other uses.)
  5. Cut each potato shell lengthwise into 4 strips and place on ungreased baking sheet.
  6. Spray potato strips lightly with cooking spray.
  7. Combine salt, paprika and pepper.
  8. Sprinkle over potato chips.
  9. Bake at 425u0b0 for 14 minutes or until crisp.
