Cucumbers In Turmeric
- 5 slicing-type cucumbers
- 3 Tbsp. pickling salt
- 1 small onion, finely minced
- 3 cloves garlic, minced
- 1 Tbsp. fresh ginger root, minced or 1 tsp. dried ground ginger
- 2 Tbsp. peanut oil
- 1 1/2 tsp. turmeric
- 1 Tbsp. white sugar
- 1/2 c. cider vinegar
- 1/4 c. water
- Peel the cucumbers.
- Cut into quarters lengthwise.
- Scrape away seeds and cut into bite-sized pieces.
- Mix with 2 tablespoons salt.
- Refrigerate for an hour.
- Wash the cucumbers in fresh water three times and drain well.
- Press in a clean dish towel to remove as much moisture as possible.
- Saute the onion, garlic and ginger root in the peanut oil until the onion is soft.
- Add the turmeric, remaining tablespoon of salt and sugar.
- Stir well.
- Add the vinegar and water.
- Simmer 10 minutes.
- Pour mixture over the cucumbers in a glass or crockery bowl.
- Refrigerate at least one hour.
- Stir a few times.
- These are great with lamb dishes and curries.
- They will keep (covered) in the refrigerator for a few weeks.
