Reduced Calorie Strawberry Angel Pie
- 3 c. frozen unsweetened or fresh strawberries
- 1 Tbsp. cornstarch
- 1 c. water
- 1 packet unflavored gelatin
- 1 egg, separated
- 1 tsp. vanilla extract
- artificial sweetener equal to 14 tsp. sugar
- 1/4 c. instant skim milk powder
- 1/2 tsp. almond extract
- 1/4 c. ice water
- 1 (9-inch) graham cracker crust
- Pour water over berries, let stand at room temperature for 1 hour.
- Drain water from berries, into pan, reserving berries. Sprinkle gelatin over 2 tablespoons liquid drained from berries. Whisk cornstarch and egg yolk into remaining water.
- Cook over medium heat until mix boils and thickens.
- Remove from heat.
- Add softened gelatin, sweetener and extracts stirring until gelatin and sweetener dissolve.
- Stir in berries; chill 1/2 hour or until mix is partially set.
- Beat egg whites, skim milk powder, ice water in chilled bowl.
- Fold into berry mix.
- Spoon into crust; chill until set.
- Makes 6 servings, 156 calories each.
