Orange Nut Bars
- 3 cans (6 oz.) frozen orange juice
- 1 1/2 c. candied mixed fruits
- 1 1/2 c. shortening
- 1 1/2 c. unsulphured molasses
- 3/4 tsp. salt
- 3 tsp. baking soda
- 3 tsp. cinnamon
- 1 1/2 c. rolled oats
- walnuts chopped
- 1 1/2 c. sugar
- 3 eggs
- 6 c. all-purpose flour
- 3 tsp. ginger
- Combine undiluted orange juice concentrate, rolled oats, fruit and nuts.
- Reserve.
- Cream together shortening and sugar.
- Add molasses and eggs, mix well.
- Sift together flour, salt, soda and spices.
- Stir into molasses mixture.
- Blend well.
- Turn into greased 24 x 14 x 2-inch pan or two 18 x 9-inch pans.
- Spread evenly.
- Bake 40 minutes at 325u0b0.
- Frost with Orange Icing when cool.
- Cut into 3 x 1-inch bars.
- Decorate with candied cherries.
