Grilled Calamari With Lemon Butter Sauce

  1. Rinse squid and cut down one side to open flat
  2. Pat dry with a paper towel
  3. Combine 1/4 cup olive oil with the oregano
  4. Toss the squid bodies in the olive oil mixture to coat well
  5. Thread the squid onto metal skewers or wood skewers that have been soaked for 30 minutes in water.
  6. Prepare your gas or wood burning grill for grilling
  7. Combine 1 Tablespoon olive oil with butter, minced garlic in a saucepan and heat gently.rnAdd lemon juice and black pepper.
  8. Remove from heat and set aside.
  9. Grill skewered squid over high heat for 2-3 minutes, turning to cook evenly.
  10. Transfer to a platter and remove skewers. Top with warm butter sauce.rnSprinkle with chopped parsely
  11. Serve with chunks of bread for dipping.
