Old Fashioned Pound Cake(May Prepare Ahead.)
- 1 lb. butter
- 2 c. sugar
- 6 eggs, separated
- 3 c. cake flour, sifted
- 1/2 tsp. salt
- 1 1/2 tsp. vanilla
- 1 c. nuts, chopped
- 3 c. all-purpose flour
- 2 c. sugar
- 1 tsp. salt
- 1 tsp. baking soda
- 3 eggs, beaten
- 1 1/2 c. vegetable oil
- 1 1/2 tsp. vanilla extract
- 1 (8 oz.) can crushed pineapple (undrained)
- 2 c. bananas, chopped
- 1 1/2 c. pecans, chopped
- Sweet Cream Cheese Frosting
- 1 (14 1/2 oz.) pkg. angel food cake mix
- 1 (8 oz.) pkg. cream cheese, softened
- 1 (14 oz.) can sweetened condensed milk
- 1/4 c. lemon juice
- 1 tsp. almond extract
- 2 1/4 c. sliced fresh strawberries
- 1 1/2 c. heavy cream
- 1/4 c. sugar
- whole strawberries for garnish
- Prepare batter and bake cake in 10-inch tube pan according to package directions; cool well, about 1 1/2 hours.
- Remove cake from pan.
- Cut a 1-inch slice crosswise from top of cake and set aside.
- Make cuts 1 inch from center and 1 inch from side of cake. With fingers, carefully remove cake within cuts, leaving a 1-inch base.
- Reserve cake pieces.
