Cheesy Beef Corn Bread
- 1 Tbsp. yellow corn meal
- 1/2 lb. ground beef
- 1 c. yellow corn meal
- 1 tsp. salt
- 1 c. milk
- 1/2 tsp. soda
- 1 c. milk
- 1 (16 oz.) can cream-style corn
- 2 eggs, beaten
- 1/4 c. vegetable oil
- 2 c. hoop cheese, shredded
- 1 large onion, chopped
- 2 to 4 jalapeno peppers, seeded and chopped
- Sprinkle 1 tablespoon corn meal in bottom of a 10-inch skillet (well-greased). Cook over medium heat until corn meal is slightly browned.
- Combine corn meal, salt and soda.
- Mix well. Add milk, corn, eggs and oil.
- Mix well.
- Pour 1/2 batter into skillet; sprinkle with cheese, onion, peppers and ground beef.
- Top with remaining batter.
- Bake in a 350u0b0 oven for 50 to 55 minutes. Makes 6 servings.
