Chicken Stir-Fry

  1. Heat oil over high heat in large nonstick skillet.
  2. Add chicken, onions and garlic to skillet.
  3. Stir-fry 2 minutes. Reduce heat.
  4. Stir in broth, beans, broccoli, mushrooms and ginger.
  5. Simmer, covered, 6 to 8 minutes until vegetables are crisp-tender.
  6. Mix together cornstarch and soy sauce; stir into skillet.
  7. Cook and stir until sauce simmers and clears.
  8. Makes 6 servings. Quick and delicious.
