Creamy Tuna Topped Broccoli
- 1 bunch fresh broccoli
- 4 Tbsp. butter or margarine
- 1/2 c. celery, finely chopped
- 1/2 c. onion, finely chopped
- 2 Tbsp. flour
- 1 1/2 c. milk
- 1/2 c. processed American cheese, shredded
- 2 (6 1/2 or 7 oz.) cans tuna, drained of excess liquid and flaked
- Wash broccoli.
- Remove long leaves and tough pieces of stalks. Cut stalks lengthwise into quarters.
- Place broccoli in large saucepan with 1-inch boiling salt water.
- Cook for 10 to 12 minutes until crisp-tender. Drain broccoli well. Reserve cooking water. In a large saucepan, melt butter over medium heat and saute celery and onion until soft. Stir in flour, blending well. Combine reserved cooking water and milk.
- Gradually stir into saucepan. Cook until mixture is slightly thickened and comes to a boil. Add cheese and stir until melted. Stir in tuna.
- Serve hot over cooked broccoli.
