Charlene'S Burritos
- 3 or 4 lb. beef roast
- 1 large potato
- 1 large onion
- 1 1/2 lb. Cheddar cheese
- 1 small can green chillies
- 1 can cream of mushroom soup
- 1 carton sour cream
- 1 doz. large flour tortillas
- 1 c. water
- 1 Tbsp. garlic powder
- Salt roast; put in pan with water.
- Simmer 3 to 4 hours until roast shreds easily.
- During last hour, add your potato.
- When it's done, mash potato and shred your roast together.
- Add soup, chillies and chopped onion.
- Place back on stove and heat just long enough to stir together.
- Lightly brush each tortilla with butter, then place a scoop of beef mixture in each tortilla and top with a large spoon of sour cream and cheese.
- Fold tortilla. Place in a large pan.
- Spread rest of sour cream and cheese on top.
- Bake at 400u0b0 for 20 minutes.
