Mocha Cheesecake(Microwave)
- 1 1/2 c. chocolate wafers, finely crushed
- 1/3 c. butter
- 1/2 Tbsp. sugar
- 2 sq. sweet chocolate
- 2 (8 oz.) pkg. cream cheese
- 4 eggs
- 1/2 c. sugar
- 2 tsp. instant coffee
- dash of salt
- Microwave butter for 30 seconds on High.
- Combine butter, cookie crumbs and sugar.
- Press in bottom of 8-inch round micro-safe pie dish.
- Microwave on High for 1 1/2 minutes; cool crust.
- Melt chocolate in dish for 2 minutes.
- Microwave cream cheese until soft.
- Combine chocolate, cream cheese, eggs, sugar, coffee and salt.
- Mix until smooth.
- Pour over cooled crust. Microwave at Medium for 14 minutes or until center is set.
- Turn dish twice during cooking.
- Refrigerate at least 4 hours before serving.
