Oklahoma Oatmeal Bread(My Friend Corenna'S Aunt Eva'S)
- 1 c. evaporated milk (use skimmed milk for heart-smart)
- 2 Tbsp. vegetable oil
- 1 Tbsp. vinegar
- 1 c. uncooked oats
- 1 c. all-purpose flour
- 1 c. brown sugar, firmly packed
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. raisins, more or less
- 1 c. nuts (unchopped), more or less
- In
- a
- large
- bowl, mix together well the milk, oil and vinegar.
- Add the oats, flour, sugar, soda and salt and again, mix well.
- Dredge raisins and nuts in a bit of flour and stir in last.
- Pour
- into
- a sprayed or greased and floured (I use Baker's Joy)

- x 3-inch loaf pan or 2 (7 x 4 x 2-inch) loaf pans. Bake at 350u0b0 for about 50 minutes, or until center tests done. (Aunt Eva lived in Oklahoma!)
