Chicken Quesadillas
- 1 Tbsp. olive oil
- 1 lb. boneless, skinless chicken breasts, cut into 1/2-inch strips
- 1 pkg. taco or fajita seasoning
- 1/2 bunch cilantro, chopped
- 1 c. Cheddar cheese, grated
- 3 to 4 green onions, chopped
- 5 to 6 burrito tortillas
- sour cream
- guacamole
- salsa
- Heat oil in skillet.
- Add chicken.
- Stir until golden brown. Add taco seasoning and 2 tablespoons or so of water.
- Add cilantro and simmer for 4 minutes.
- Cover and set aside.
- Divide and place chicken onto a half side of each tortilla.
- Add green onions, cheese and a small amount of salsa if desired.
- Fold over tortilla. Carefully place one folded tortilla in clean, dry skillet over medium heat.
- Cover and let cook 5 minutes.
- Carefully turn onto other side and heat 3 to 5 minutes until golden and ingredients are melted inside.
- Repeat with other quesadillas.
