Chicken Quesadillas

  1. Heat oil in skillet.
  2. Add chicken.
  3. Stir until golden brown. Add taco seasoning and 2 tablespoons or so of water.
  4. Add cilantro and simmer for 4 minutes.
  5. Cover and set aside.
  6. Divide and place chicken onto a half side of each tortilla.
  7. Add green onions, cheese and a small amount of salsa if desired.
  8. Fold over tortilla. Carefully place one folded tortilla in clean, dry skillet over medium heat.
  9. Cover and let cook 5 minutes.
  10. Carefully turn onto other side and heat 3 to 5 minutes until golden and ingredients are melted inside.
  11. Repeat with other quesadillas.
