Blackbottoms
- 1 (8 oz.) pkg. cream cheese
- 1 egg, beaten
- 1 1/3 c. sugar
- 5/8 tsp. salt
- 1 (6 oz.) pkg. chocolate bits
- 1 1/2 c. flour
- 1/4 c. cocoa
- 1 tsp. baking soda
- 1 c. water
- 1/3 c. vegetable oil
- 1 Tbsp. vinegar
- 1 tsp. vanilla
- Combine cream cheese, beaten egg, 1/3 cup sugar and 1/8 teaspoon salt.
- Beat well.
- Stir in chocolate bits.
- Set aside. Sift together 1 1/2 cups flour, 1 cup sugar, cocoa, baking soda and 1/2 teaspoon salt.
- Add water, oil, vinegar and vanilla to flour mixture.
- Beat well.
- Fill small cupcake liners placed in muffin tin half full of flour mixture.
- Drop approximately 3/4 teaspoon of cream cheese mixture on top of each cupcake.
- Bake in preheated 350u0b0 oven for 20 to 25 minutes.
- Makes 45 miniature cupcakes.
