Apple Spice Muffin
- Apple compote
- 375 grams Apples(red gravinstiens)
- 50 grams Brown butter
- 62 grams Brown sugar
- 1 tablespoon Raw sugar
- 1/2 teaspoon Salt
- 1/2 teaspoon Nutmeg
- 1/2 teaspoon Cinnamon
- 1/2 teaspoon Ground star anise
- Muffin Base
- 280 grams Soft unsalted butter
- 1 cup Granulated sugar
- 4 Eggs
- 360 grams Sour cream
- 450 grams AP flour
- 1/2 cup Almond flour
- 1 tablespoon Baking powder
- 1 teaspoon Baking soda
- 2 teaspoons Salt
- Peel and dice your apples. Set aside. Brown your butter in a sause pan. Next add the sugars and salt until dissolved . In a separate bowl take the diced apples and spices and evenly incorporate. Next add apple mixture to heated butter. Cook for 10 minutes.
- In a KitchenAid mixer cream together butter and sugar until light and fluffy. Slowly incorporate eggs. Then alternate sour cream and dry ingredients until fully Incorporated
