Farro With Sweet Potato And Black Garlic

  1. Cook farro according to package directions. (If you're using raw farro, cook it however you do that - I've only used the quick-cooking kind!)
  2. Warm a spoonful of oil in a skillet over medium heat. Add diced sweet potato and cook until soft and slightly browned.
  3. Whisk dressing ingredients together in a bowl.
  4. Combine farro, sweet potato, garlic, walnuts, and dressing in a bowl. Season with salt and pepper to taste. If salad is too dry for your taste, add a splash of olive oil and stir.
