Hot Peach Vidalia Cheese Spread

  1. Preheat oven to 350 degrees F. In large skillet, cook bacon over medium-high heat for 5 minutes or until crisp. Remove from skillet and drain on paper towel. Put onion into skillet and saute for 7-8 minutes, or until tender. Add peaches and salt and continue to saute for 3-4 minutes longer. Remove from heat and set aside.
  2. In large bowl, combine cream cheese, cheddar cheese, mayonnaise, smoked paprika and poppy seed. Stir in bacon and onion/peach mixture. Spray a 1-quart baking dish with nonstick cooking spray. Spread cheese mixture into dish. Sprinkle pecans on top. Bake at 350 degrees F. for 25-30 minutes.
  3. Let rest 5 minutes before serving with crackers.
