Fruit Cake
- 1 lb. raisins
- 1 lb. currants
- 1 lb. cherries, crystallized
- 1/2 lb. pineapple, crystallized
- 1/4 lb. orange peel, crystallized
- 1/4 lb. citron, crystallized
- 1/4 lb. lemon peel, crystallized
- 1/2 lb. dates
- 1/2 lb. almonds
- 1/2 lb. English walnuts
- 1/2 lb. pecans
- 1 lb. butter
- 6 eggs
- 4 c. plain flour
- 1 tsp. fruit cake spice
- 2 tsp. baking powder
- 1/2 tsp. soda
- 1 pt. grape juice
- 2 c. sugar
- Cream butter, sugar and eggs together.
- Sift flour, baking powder and soda and sift again.
- Cut fruit and flour with 1/2 flour.
- Add spice to floured fruit.
- Mix batter with 1/2 flour and grape juice.
- Line pan with two layers waxed paper and grease. Bake 5 to 6 hours at 250u0b0.
- This recipe makes two 5 pound cakes. Use tube cake pan.
