Pumpkin Pecan Bread
- 1 c. softened butter
- 1 c. granulated sugar
- 1 c. packed dark brown sugar
- 4 eggs
- 1 c. pumpkin
- 2 3/4 c. all-purpose flour
- 1 Tbsp. pumpkin pie spice
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. chopped pecans
- Cream the butter and sugars in a large mixing bowl until light. Add eggs, one at a time, beating well after each addition. Beat in pumpkin. Combine the flour, pumpkin pie spice, baking powder, baking soda, salt and pecans in small bowl. Add to pumpkin mixture.
- Mix just until blended.
- Spoon into 2 greased and floured 8 1/2 x 4 1/2-inch loaf pans. Bake in preheated 350u0b0 oven for 1 hour and 10 minutes or until wooden pick comes out clean when inserted in center. Cool for 10 minutes.
- Remove from pans and cool on wire rack.
- Makes 2 loaves.
