John'S Apple Cake(From John Kram'S Bakery Back In 1930)
- 5 c. peeled, sliced tart green apples (such as Granny Smith, about 1 3/4 lb.)
- 2 c. sugar
- 2 tsp. cinnamon
- 1 c. corn oil
- 4 large eggs
- 3 c. unbleached all-purpose flour
- 1 Tbsp. double-acting baking powder
- 1/2 tsp. salt
- 2 tsp. vanilla
- In a bowl, combine well the apples and 1/4 cup of the sugar. Add the cinnamon.
- In a large bowl with an electric mixer, combine the oil and the 1 3/4 cups of sugar and beat for 2 minutes.
- Add eggs.
- In a bowl, sift the flour, baking powder and salt.
- Add the flour mixture to the oil and add orange juice and beat in the vanilla.
- Pour 1/3 of the batter into a buttered and floured 10-inch tube pan.
- Arrange 1/2 the apple mixture over it.
- Pour half the remaining apple mixture.
- Bake the cake on 350u0b0 for 50 minutes to an hour.
- Let the cake cool for 10 minutes.
