Sweet Sour Fillets
- 1 lb. flounder fillets
- 1/4 c. brown sugar
- 1 Tbsp. cornstarch
- 1 (8 oz.) can pineapple chunks, drained (reserve syrup)
- 1/2 medium green pepper, cut into thin strips
- 1/4 c. cider vinegar
- 1 Tbsp. soy sauce
- 2 green onions, sliced
- 1/8 tsp. garlic powder
- 1/4 c. slivered almonds, roasted
- Arrange fillets in single layer.
- Cover with plastic wrap. Cook in microwave on High 5 to 7 minutes or until fish flakes easily with fork.
- Let stand 5 minutes.
- In 1-quart casserole, combine sugar and cornstarch.
- Stir in pineapple juice.
- Add green pepper, vinegar, soy sauce, onions and garlic.
- Cook at High 3 to 4 minutes or until mixture thickens.
- Stir twice.
- Stir in pineapple chunks and almonds.
- Arrange fillets on serving dish. Spoon mixture over fillets.
