Microwave Lasagna
- 9 uncooked lasagna noodles (about 7 oz.)
- 1 (15 oz.) container Ricotta cheese
- 8 oz. shredded Mozzarella cheese (1 c.)
- 4 oz. coarsely shredded Parmesan cheese (1 c.)
- Tomato Meat Sauce (see recipe)
- Spread 1 cup sauce over bottom of a 12 x 8 x 2-inch baking dish.
- Top with 3 noodles in a single layer, 1 cup Ricotta, 2/3 cup Mozzarella, 1/3 cup Parmesan and 1 1/2 cups sauce.
- Repeat with a second layer.
- Top with remaining noodles, then the sauce and Mozzarella and Parmesan.
- Cover lightly with vented plastic wrap.
- Microwave on High, 6 to 8 minutes; rotate dish 1/2 turn. Reduce power to Medium.
- Microwave 30 to 32 minutes, rotating dish 1/2 turn once until noodles are tender.
- Shield corners of dish with foil if noodles begin to overcook.
- Let stand covered 5 to 10 minutes to equalize temperature and for easier cutting.
- Makes 8 servings.
