Bell Curve Rigs

  1. Part 1: Egg in Bell Pepperrn1. Slice the bell peppers 2 - 3 inches and devein rn2. Add oil to pan and heat at medium temrn3. Pan-sear bell peppers from the sides until desired toastrn4. Place the bell pepper side up, and drop egg inside (w/o shell)rn5. Sprinkle salt and pepper to tastern6. Let the egg cook until desired consistency
  2. Part 2: Saucern1. Add oil to pan and heat at medium temrn2. Slice ham as desired (preferably long strips) rn3. Thinly slice jalapenos and onion / tomato in small cubesrn4. Add ham to pan first and let cook for 2 - 3 minutesrn5. Add jalapenos and onions to the ham / cook until semi crispyrn6. Add tomatoes & add dash of salt and pepper rn7. Reduce flame to ensure that the tomato loosens its juices
  3. Part 3: Servern1. Place two cooked eggs in bell pepper in a platern2. Add the Mexican Sauce to the bell pepper until coveredrn3. Accompany with pan-seared Mexican squash and fresh avocadornrnYou can also eat with tortillas
