Cannelloni
- 1 lb. ground beef
- 12 cannelloni or manicotti
- 1/2 c. finely chopped red pepper
- 32 oz. jar spaghetti sauce, divided
- 1/8 tsp. thyme, crushed
- 1 1/2 c. Mozzarella cheese, shredded and divided
- 2 Tbsp. Parmesan cheese, grated
- 1/2 lb. sweet Italian sausage
- 1/2 c. chopped onion
- 2 cloves garlic, minced
- 1/2 tsp. oregano, crushed
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/2 c. Ricotta cheese
- 1/4 c. chopped parsley
- 2 egg yolks
- 1/2 c. Provolone cheese, shredded and divided
- In a large skillet, cook beef until brown.
- Drain and remove from skillet.
- Add sausage, cook 12 to 15 minutes until well browned.
- Remove from skillet.
