Ginger-Flavored Pork Chops With Apples

  1. Mix together the flour, salt and pepper. Sprinkle the pork chops with salt and pepper. Coat the pork chops in the flour mixture, shaking off the excess flour.
  2. In a bowl combine the orange juice, ginger, brown sugar and zest.
  3. Peel and quarter the apples.
  4. Heat the oil in a large frying pan. Brown the chops in the oil for 4 to 6 minutes on each side. Remove the pork and spoon or pour out most of the accumulated fat. Return the chops to the pan and pour the orange juice mixture over them.Bring to a boil, add the apples and cook covered for 10 to 12 minutes , until the pork reaches a temperature of a 140 degrees. Turn off the heat and let the pork sit covered for another 3 to 5 minutes, Now the temperature of the pork should be around 150 to 160. Do not overcook the pork because the pork chops will get tough. You want them nice and juicy.
