Chicken And Chips Casserole
- 3 c. cooked, cubed chicken
- 2 c. cooked rice
- 1 can cream of chicken soup
- 1/2 c. milk
- 4 Tbsp. butter
- 1/2 c. celery, finely chopped
- 1/4 c. chopped onion
- 1 (10 oz.) pkg. frozen peas
- 3 c. potato chips, crushed
- Mix rice, soup and milk.
- Set aside while you prepare the other ingredients. Melt butter in a saucepan and add celery and onion; cook over low heat until transparent.
- Remove from heat and stir in peas and chicken.
- Add this mixture to the rice/soup mixture and mix well. Layer 1 1/2 cups crushed chips in the bottom of a buttered casserole dish.
- Carefully pour in the chicken mixture.
- Top with remainder of chips.
- Bake at 325u0b0 for 35 minutes or until chips have turned rich brown.
- Serve piping hot.
