Boomer Chili
- 64 oz. beef broth
- 1 medium red onion
- 2 chili peppers
- 3 lb. beef
- 2 Tbsp. Crisco
- 3 cloves garlic
- 1/2 tsp. salt
- 1 tsp. oregano
- 2 Tbsp. cumin
- 1 Tbsp. chili powder
- 1 tsp. black pepper
- 1 tsp. paprika
- 6 oz. tomato paste
- 2 Tbsp. masa flour
- Simmer beef broth, peeled red onion and seeded chili peppers for one hour.
- Remove onion and peppers and finely chop them.
- In a large pot melt the Crisco and saute the garlic, onion and peppers.
- Cut the beef into 1/2 inch squares and add them to the pot.
- Cook them over medium heat until they are gray.
- Add the salt, oregano, cumi, chili pepper, black pepper and paprika and stir together for about 2 minutes.
- Add the beef broth and simmer over low for 2 hours.
- Stir in masa flour and cook for another 20 minutes.
- Serve when at the proper thickness.
