Brunch Sausage Casserole
- 1 lb. bulk pork sausage
- 1 c. quick cooking grits
- 2 Tbsp. butter or margarine
- 4 eggs, beaten
- 1/2 c. milk
- 1/2 tsp. salt
- 2 c. shredded sharp Cheddar cheese (8 oz.)
- Preheat the oven to 350u0b0.
- Grease a 2-quart square baking dish.
- Set aside.
- In large skillet, over medium-high heat, cook the sausage until browned, stirring to break up the meat.
- Drain on paper towels.
- Cook the grits according to package directions, omitting the salt.
- Stir in the butter or margarine until melted. Stir in the sausage, eggs, milk, salt and 1 1/4 cups of the cheese.
- Spread the sausage mixture in the prepared baking dish. Bake, uncovered, for 40 to 45 minutes, or until a knife inserted near the center comes out clean.
- Sprinkle the casserole with the remaining cheese.
- Bake for 2 1/2 minutes.
- Let stand for 10 minutes, then serve.
